Joanna's Pineapple Cake

One of the biggest hits at the recent Sugarbush Farm Pot Luck Fundraiser was a delicious pineapple cake. 
Here's the recipe from Joanna Bodlien. Writes Joanna: "Unfortunately there is no great story about it. Feel free to share it ~ enjoy!"

Pineapple Cake

2 C flour

2 C sugar

2 eggs - beaten

2 tsp baking soda

1 20oz can of crushed pineapple (with the juice)
Mix all ingredients and pour into a greased 13x9 (I used 3 8" cake pans)
Bake for 30 minutes at 350

Frosting

1 pkg softened cream cheese

1 stick softened butter

1 C powdered sugar
1 tsp vanilla
dash of salt

Cream the butter & cream cheese, then add sugar, vanilla & salt.

"I usually let the cake cool for about 3 minutes then put a thin layer of the frosting on the cake. That way since the cake is still warm it melts the frosting and lets it soak into the cake. Then when the cake is cooled add the rest of the frosting.
We are pecan lovers too so I also sprinkle it with pecans."

From Patty and Bill:  "Remember, we'll be closing March 31st for Spring Maintenance and Re-opening April 18th. The answering machine will be on to take reservations for Stand Up Comedy Night On April 20th, so give us a call any time....."
Mr. P's Mountain Smokehouse and Shelby's Kitchen Therapy
From Shelby and Chris: "Spring is here, according to the calendar anyway! Time to do some spring cleaning at Mr. P's, so we'll be closed from Easter Sunday and for the month of April. We'll reopen on Friday, May 3 at 11:30 am".

 

A New Morning For Morningstar Bistro -- and a Song!

Morningstar Bistro is opening its doors this Monday with free crepes or a specialty coffee to celebrate the restaurant emerging from its annual winter hibernation.

There will also be raffles. The festivities start at 10am and go through to 3 pm. To get a freebie you must be one of the first 50 people through the doors.

“The floors have been refinished, the place is sparkling. We are ready to go,” owner Myriam Friedman told us recently.

"I am really excited about the re-opening. It's going to be good to catch up with friends and people we haven't seen for a while."

Myriam, who recently returned from Paris, says she is “toying with the idea of tweaking the menu“, with some French inspired dishes. But rest assured all of the classics Morningstar is known for will still be on the menu.

In July and August the restaurant will have new hours  -- opening at 7 am -- so summer fans can get their caffeine buzz and breakfast earlier. (Good news for one Yogini we know who has an early start!)

Remembering Schroon Laker Bobby Matchutas

We can almost smell the crawfish boil from here! And that means it’s the annual Witherbee's Carriage House Bayou Bob Crawfish Boil, which started Friday and goes until tonight.

As in previous years, Bill and Patty have had thousands of pounds of the mud bugs flown in fresh from Louisiana for this special event, which memorializes Louisiana native and long time Schroon Lake resident Bobby Matchutas.

Bob taught Bill and Patty all of the secrets to a traditional Louisiana Crawfish Boil, including a dizzying array of spices and the precise timing required to achieve that authentic Cajun taste.
